Orange Mint & Ginger Dressing*

  • 1-1/2 C. fresh orange juice
  • 3/4 C. olive oil
  • 1 tsp. finely grated ginger
  • 5 mint leaves, finely chopped
  • 1 tsp. miso paste (optional)

Shake the first two ingredients vigorously in a jar, add remaining ingredients and shake until well mixed.

Chickpea Burgers*

  • 1 C. besan (chickpea) flour
  • 4 C. chickpeas, mashed
  • 2 tsp. tamari
  • 2 cloves garlic, minced
  • 1/2 Spanish onion
  • 1 grated carrot
  • 2 heaping tsp. fresh thyme, finely chopped
  • Juice of 1/2 lime or 1/4 lemon
  • Soak 2 Tbsp. chia seeds in 1/4 to 1/2 C. water
  • Oil for frying (sunflower, avocado or macadamia oil)

Mix all ingredients together except the oil. Heat a small amount of oil in a frying pan and scoop mixture into whatever size burger you want. Cook for 4-5 minutes, flip over and then cook 4-5 more minutes. Press down to help the inside to cook, and remove from pan when it is cooked through and is a golden brown.
