Orange Mint & Ginger Dressing*

- 1-1/2 C. fresh orange juice
- 3/4 C. olive oil
- 1 tsp. finely grated ginger
- 5 mint leaves, finely chopped
- 1 tsp. miso paste (optional)
Shake the first two ingredients vigorously in a jar, add remaining ingredients and shake until well mixed.
Chickpea Burgers*

- 1 C. besan (chickpea) flour
- 4 C. chickpeas, mashed
- 2 tsp. tamari
- 2 cloves garlic, minced
- 1/2 Spanish onion
- 1 grated carrot
- 2 heaping tsp. fresh thyme, finely chopped
- Juice of 1/2 lime or 1/4 lemon
- Soak 2 Tbsp. chia seeds in 1/4 to 1/2 C. water
- Oil for frying (sunflower, avocado or macadamia oil)

Mix all ingredients together except the oil. Heat a small amount of oil in a frying pan and scoop mixture into whatever size burger you want. Cook for 4-5 minutes, flip over and then cook 4-5 more minutes. Press down to help the inside to cook, and remove from pan when it is cooked through and is a golden brown.
